Health: Vegan Pancakes

If you are like me, you like meat, but studies have shown that if we have one day a week without meat, we are more likely to be healthier, and less likely to have high cholesterol and high blood pressure.

One possible recipe to use on this meat free day is Vegan Pancakes – and they actually taste ok!!!

Vegan diets do not contain any animal products, including eggs and dairy produce – the two most common allergies in people’s diet. The recipe for pancakes is a very healthy alternative.

Ingredients:
50g (2ox) self-raising flour
Pinch of sea salt
Pinch of ground black pepper
150ml (1/4 pint soya milk)
2 tablespoons sunflower oil
I teaspoon lemon juice

Method:

Place flour, sea salt and black pepper in a bowl. Add the soya milk slowly, mixing with a whisk to form a smooth batter. Add the sunflower oil and whisk thoroughly. Add the lemon juice and leave to stand for 10min. (Makes 4 pancakes)
